Darcy Rhodes is a newly registered dietitian in Spokane, Washington, USA. She obtained a bachelor’s degree in human nutrition and dietetics from the Metropolitan State University of Denver. She also completed a family and consumer sciences degree with a coordinated program in dietetics from the University of Idaho.
Darcy is passionate about wellness and nutrition education. Before becoming a registered dietitian, she worked in natural food retail nutrition and food service/senior care nutrition. Currently, Darcy is a self-employed dietitian and writes nutrition articles on her Facebook page. She is leading a nutrition challenge called “12 Months of Healthy,” which focuses on developing healthy habits by making one small change at a time.
Darcy works as the site manager for the Custer County Senior center in Westcliffe, Colorado, preparing meals for 30–40 seniors daily and overseeing volunteers.
In her (limited!) spare time, Darcy enjoys cooking, baking, and doing yoga.
